Tortellini with walnut sauce
Ingredients for four people:
- 500 gr of fresh tortellini
- 100 gr of walnuts
- 1 clove garlic
- 15 gr of bread crumbs soaked in milk
- 25 gr of sheep’s cheese
- 150 ml of extra virgin olive oil
- 40 gr of butter
- Rocket leaves
- Salt and pepper
Tortellini recipe with walnut sauce:
-In a saucepan with plenty of boiling water and salt cook Pasta.
–Whiten in boiling water the walnuts and the garlic clove for one minute. Mix these with the rest of the sauce ingredients and add salt and pepper.
-Reserve some of the cooking water and drain the pasta. Mix the sauce with the pasta in the saucepan, adding a little of the reserved water so that the sauce is not too thick.
-Serve with chopped arugula on top.
The tortellini with walnut sauce is a main dish, which is enjoyed accompanied by a salad or hors d’oeuvres.
