Ingredients for 4 people
- 100 gr. blue cheese
- 200 ml. milk
- 25 gr. from onion
- 10 ml. liquid cream
- 10 gr. of butter
- Nutmeg
Preparation of the blue cheese sauce
- The first thing you should do is peel the onion, then chop it into very fine julienne strips. Reservation.
- In a saucepan or frying pan, put the butter to heat over low heat. If you turn up the heat, the butter can burn before it even starts to melt.
- Once the butter has completely melted, fry the onion in it. Let it simmer like this, over low heat for about 10 minutes. Even so, stir from time to time, so that it does not stick at any time.
- When you see that the onion is transparent, you can add the cheese, keeping the heat to a minimum at all times. You must wait for it to melt as well, while stirring, since it can also burn.
- As soon as you see that the cheese has completely melted, you can pour the milk into the pan, along with the cream.
- Both one ingredient and the other should be added little by little. And also, without stopping stirring at any time, and with the fire also at a minimum.
- Continue stirring all the ingredients, in a circular way and gently, but without stopping.
- The moment you see that the sauce has the consistency you want, add a dash of nutmeg, to your liking.
- Stir a little more, so that this ingredient integrates well with the rest, and you can turn off the heat and set aside your blue cheese sauce.
