  • 1 kg. of fillets of Mere
  • 3 teeth of Garlic
  • 300 ml. juice Orange natural
  • 2 tablespoons of juice lemon
  • 2 tablespoons parsley
  • 1 tablespoon of cornstarch
  • 3 tablespoons olive oil
  • 2 tablespoons Butter
  • Saffron
  • Black pepper
  • Salt to taste

Grouper in orange sauce

  1. You are going to start by seasoning the grouper fillets and reserving them for a few minutes.
  2. Then peel the garlic cloves, dice them and then finely chop the parsley after washing and draining.
  3. Add the butter and a tablespoon of olive oil to a skillet and once it is hot, add the fillets. When they brown (two minutes per side will be enough), take them off the heat and place them in a medium saucepan.
  4. Next, sauté the garlic and parsley in the same pan where you brown the fish, add a little more oil if necessary and when the garlic begins to change color, pour it over the grouper. Reservation.
  5. Now, to make the sauce, dilute the cornstarch in a cup with three tablespoons of water, chop the saffron and stir.
  6. Place this mixture in a small pot, add the orange juice, the lemon juice and cook over low heat for 15 minutes without stopping stirring.
  7. Pour the sauce over the fish, cook for a couple of minutes so that the flavors are integrated and after that time, correct the seasoning before removing it from the heat.
  8. When you go to serve your grouper in orange sauce, sprinkle it with the chopped parsley to decorate and accompany it with potatoes, rice or a rich salad. Enjoy it!
