  • 5 teeth of Garlic
  • 1 tablespoon lime zest or 2 kaffir lime leaves
  • 1 tablespoon ground ginger
  • 2 teaspoons fresh coriander
  • 1 tablespoon of prawn paste
  • 1 tablespoon ground cumin
  • 1/2 teaspoon coriander seed powder
  • 1/2 teaspoon of sugar
  • 1/2 teaspoon salt
  • 1 onion little
  • 1 green chilli
  • The juice of 1 lime
  • 3 tablespoons oil coconut
  • 1 tablespoon of sunflower oil

Preparation of the green curry sauce

  1. Peel the onion, cut it into four parts and add it to a pan with a tablespoon of sunflower oil. Bring to low heat and cook for 5 minutes.
  2. Meanwhile, peel the garlic cloves and cut them in half to add them to the pan with the onion and let them brown as well. Let cook until the onion is transparent. Once this is achieved, turn off the heat and remove.
  3. Wash and cut the green chilli in half. This ingredient will give it a slightly spicy touch, but if you are looking for a stronger result then you can add more chilli.
  4. Pour everything you have in the pan into the blender glass and then add the rest of the ingredients: chilli, cumin, ginger, coriander seed, salt, sugar, fresh coriander, lemon zest or Keffir lime leaves, shrimp paste, tablespoons of coconut oil and lime juice.
  5. Blend with the help of the blender until you get a homogeneous paste that will be your tasty green curry sauce. If you wish, you can strain for a creamier and more perfect result.
  6. Once ready, keep in the fridge to reserve until the moment you are going to use it, you can incorporate it into meat or vegetable dishes. The ideal is to consume it at the moment, although you can keep it in a previously sterilized jar for several days in the refrigerator. You will see what a delight!
