Preparation of the kid stew

  1. To begin, we are going to clean the goat meat, eliminating any trace of fat or nerve that we see.
  2. When you have the meat completely clean, cut it into medium-sized cubes and gradually leave them in a container.
  3. Cut the red pepper into small pieces and do the same with the 50 gr. liver.
  4. Peel the garlic, slice it, and mash it in a mortar. Put a drizzle of olive oil in a large pot and add the garlic and pepper to it.
  5. When both foods have taken on a little color, add the liver and stir well so that some flavors mix with each other. Cook all this over medium heat for about ten minutes, until the liver takes a quite golden hue.
  6. Carefully remove the pieces of liver and leave the pepper and garlic inside the pot.
  7. Now we are going to brown the kid pieces in the pot together with the garlic and the pepper for about ten minutes, keeping the fire at the same power so that it is done well.
  8. Crush the liver that you had previously cooked in a mortar until you manage to form a kind of paste. Add the glass of white wine and stir with the help of a spoon. Pour the dough that you have obtained into the pot along with a little salt and the bay leaves.
  9. When you see that the meat begins to darken and take on a brown tone, add hot paprika to taste. If you don’t want to go overboard with the quantity, it is best to add a couple of tablespoons. Stir everything with a wooden spoon to integrate the flavors and leave it over medium heat for a couple of minutes.
  10. Put the heat on medium power for about eight minutes or so to consume the alcohol in the white wine, and then lower the heat to the lowest setting.
  11. Next, cover the pot and leave it over low heat for about 50 to 60 minutes, until the meat is very tender.
  12. Once the meat is done, turn off the heat and let everything rest in the pot. Check the salt and, if it is a little sweet, add a little more.
  13. When it has cooled a bit and you see that the sauce has gained a little thickness, cook it all for another five minutes so that the flavors finish settling.
  14. Now you can enjoy your kid stew!
