  • 1 kg. from potatoes fresh
  • 1 kg. wheat flour
  • 1 tablespoon of nutmeg
  • 70 gr. vegetable margarine
  • 50 ml. soy milk
  • 1 bay leaf
  • 1 pinch of pepper
  • Salt

Preparation of the gnocchi without eggs

  1. To start preparing these delicious egg-free gnocchi, the first thing you have to do is put a large pot of water to boil and, while you wait for it to reach boiling temperature, clean and peel the potatoes. It is preferable that they are small, since this way they will cook faster.
  2. If the water is already hot enough, add the potatoes along with a tablespoon of margarine, a bay leaf and a little salt and make sure the potatoes are completely covered. They have to be cooking for twenty minutes but, to make sure they are done, go prodding them from time to time.
  3. When this time has passed, drain them carefully in a colander and let them cool.
  4. As soon as they have cooled, put the potatoes in a bowl and mash them as small as you can with a fork. You have to make them look like a puree.
  5. Now, add the flour, the rest of the margarine, the nutmeg and the milk to the puree. Mix everything well and then knead it with your hands to get a compact mixture. If you see that it is very dry, add a little water.
  6. Next, you have to make the potato balls with the dough that we have cooked. Take portions of the mixture with the help of a spoon and make balls the size of a ping pong ball.
  7. Bring the water back to a boil in a pot over medium-high heat and, when it is very hot, carefully add the gnocchi. When you see them floating to the surface, turn off the fire. Your gnocchi without eggs are ready! Accompany them with your favorite sauce and enjoy all its flavor!
