Ingredients

For the gnocchi:

  • ½ kg. from potatoes
  • 150 gr. Of flour
  • 1 yolk egg
  • 2 tablespoons of grated cheese
  • 1 tablespoon of oil
  • 1 bay leaf
  • Salt

For the sauce:

  • 200 ml. from cream
  • 100 gr. from mushrooms
  • 100 gr. of york ham
  • 1 tablespoon cornstarch
  • 1 tablespoon butter
  • 50 gr. Roquefort cheese
  • 1 teaspoon of nutmeg
  • 50 gr. grated cheese

Preparation of the gnocchi with roquefort

  1. Let’s start with the potatoes. Take them and wash them well and then bring them to a boil with water, salt, bay leaf and a drizzle of oil. Leave them for about thirty minutes and, when you can puncture them, put them to drain in a colander so that they lose all the water. Remove the skin as soon as they cool.
  2. Now we are going to make a puree with the peeled potatoes. Mash them in a bowl and, as soon as they are, add the flour and knead with your hands.
  3. Next, add the egg yolk, cheese and salt and pepper to taste. Knead again and shape it into an elongated roll.
  4. Now you have to take the dough that you obtained as a result and form the balls. When you have them all, put them to boil with salt in a pot and when you see that they float, set them aside and put them to drain. Let’s go for the sauce.
  5. First wash and cut the mushrooms into slices and put them in a pot over low heat with a little oil. Cut the ham and put it in the pot as well. When you see that everything takes a golden hue, add the cream and cornstarch.
  6. Add the butter without stopping to move so that the cornstarch does not settle and stick. When you see that the sauce is thick, add the Roquefort cheese, finely chopped, and continue mixing. Add the nutmeg and turn off the heat. Add the gnocchi and grated cheese and stir again.
  7. And that’s all! We can now enjoy these delicious roquefort gnocchi. You will see that they have been so rich that you will soon want to repeat. Very good profit!
