- 200 gr. corn flour
- 500 ml. milk
- two eggs
- ¼ tablespoon sugar
- ¼ tablespoon of salt
- Olive oil
Preparation of gluten-free crepes
- Sift the flour into a large bowl and make a volcano in the center with the help of a spoon. In this volcano you pour the sugar and salt. Close the hole and stir a little with a spoon to spread.
- Beat the whole eggs in a bowl (white and yolk) and add a drizzle of olive oil. Beat again so that the oil and the egg combine in a new mixture.
- Then add the milk and beat again until you get a homogeneous sauce.
- Now carefully, you are going to pour the flour while with an arm mixer, or some electric rods, you make the mixture to form a kind of cream. Beat this cream for about 8 minutes so that all the ingredients are correctly integrated.
- Heat two tablespoons of olive oil in a pan and when it is hot add the equivalent of one tablespoon of the dough you have prepared. Wait a couple of minutes for it to be done from the bottom and turn it over. Another couple of minutes and you can remove it. Repeat the process until you have made all the crepes gluten-free and enjoy!
