  • 3 eggs
  • 150 gr. of sugar
  • 150 gr. Of olive oil
  • 1 lemon
  • 180 gr. gluten-free flour
  • 1/2 envelope of yeast
  • Salt

Preparation of gluten-free muffins

  1. The first of all is to beat the eggs with the sugar, which will give you each time a whitish and whiter mixture (if you use electric rods it will take much less time to have the mixture ready).
  2. You are going to grate the lemon well to obtain its skin, but only the yellow part tries not to take anything away from the white or you would end up spoiling your mixture by giving it a too bitter tone, and cut it in half to obtain its juice.
  3. Add the lemon juice and the skin and mix again.
  4. Now go slowly pouring in the olive oil while beating until you form a unique mixture.
  5. Sift the flour into a plate, poke a hole in the center with a toilet paper joint and add the yeast. Mix with the help of a teaspoon. You are also going to add a little salt and stir again to mix.
  6. Without stopping beating with the help of the rods, add the mixture until it forms an increasingly creamy mixture, which you pour into the different muffin molds that you have and let it rest in the fridge for at least less for a quarter of an hour so that it has more consistency.
  7. While they rest, put the oven on at a temperature of 200º C so that it takes up heat.
  8. After the quarter of an hour, put them in the oven and bake for about 20 minutes, so that the dough rises and is well browned.
  9. Before eating them it is better that you let them rest a little.
