German meatloaf recipe

The german meatloaf I’m sure you will find it very curious when you try it and you will see how tasty it will be.


For the meatloaf:

  • 500 gr. from mince beef
  • 250 gr. minced pork
  • 30 slices of bacon
  • 100 gr. pate
  • 100 gr. bread crumbs
  • 5 eggs
  • 1/2 onion
  • 1 tooth of Garlic
  • 2 tablespoons sugar
  • 1 glass of White wine
  • 50 gr. mustard seeds
  • Water
  • Olive oil
  • Salt
  • Pepper

For the potato foam:

German-style meatloaf preparation

  1. On the one hand you are going to cook the eggs so that they are hard and on the other hand the potatoes, well peeled and washed, as you will need them to make the potato foam.
  2. In another saucepan, boil water with two tablespoons of sugar, and when it starts to boil, add the mustard. Boil for 5 minutes, add a splash of olive oil and remove from heat, reserving for later.
  3. Put a little oil in a pan and fry the onion with the garlic clove after having minced both ingredients well.
  4. The meats are mixed in a bowl, seasoned to your liking, along with the pate, a little white wine and the breadcrumbs, using your hands to integrate everything well into the mixture.
  5. When the onion is well browned, add this mixture, being very careful not to get too much oil, and knead again to integrate both ingredients.
  6. Cover the bottom of the mold that you are going to use with the bacon slices, except for three that you keep for later, and pour half of the mixture, distributing it well with a spoon.
  7. Peel the eggs and place them in a straight line, covering with the rest of the meat. You spread it well and put the slices on top.
  8. Bake at 180º C for an hour and a half.
  9. Now we will make the potato foam, for which, when the potato is ready, crush it together with the cream, mustard, a little white wine and seasoning to your liking.
  10. Plate everything when the meatloaf is done and sprinkle the mustard seeds to taste on top of the meatloaf as you eat it.
