For the salmorejo

  • 1 kg. from salmorejo
  • 150 gr. stale bread crumbs
  • two eggs
  • 1 tooth of Garlic
  • 50 ml. of wine
  • 150 ml. Of olive oil
  • Salt

  • 100 gr. from Cod desalted
  • 1/2 lemon
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • Olive oil

Preparation of salmorejo with cod

  1. To make this recipe, the cod must be desalted. If you have not bought it already desalted, you will have to soak them from the day before, changing the water every four hours so that it is desalted.
  2. Once desalted, put it in a bowl with the lemon juice, the pepper and the bay leaf pulverized with the mortar. Cover with a good jet of olive oil, stir it a little and save for later.
  3. Now the eggs are going to cook them with water, for about 10 minutes until they get hard. Once hard, you pass them through cold water, peel them and cut them into small pieces.
