Baena salmorejo, better known as flamenco salmorejo, is prepared very easily, almost in the same way as traditional salmorejo, what changes is the garnish that is added to it.


Baena salmorejo preparation

  6. Now add the wine vinegar, stir a little and, continuing to beat, pour in the olive oil little by little, until a slightly dense sauce forms.
  7. Reserve in the fridge for a few minutes, to cool, while you fry the ham slices a little.
  8. Finally, cover with the garnish, cutting the eggs into quarters and placing the slices of ham and serve.
