- 500 gr. from spinach
- 150 gr. of small beans
- 500 gr. from potatoes
- 1 large bone is backbone or pork
- 2 tender sausages
- 1 piece of pork shoulder
- 50 gr. of pork fat or bacon
- ½ teaspoon sweet paprika
- 2 tablespoons olive oil
Preparation of Galician broth with spinach
- The night before preparing this broth you must soak the beans, so that they hydrate. If the ham is salty, put it to soak as well, and thus it will lose a lot of salt and will not spoil the broth.
- When you go to prepare the broth, start by pouring 2 liters of water into a large pot, with a little salt. Cook the beans, the bone, the chorizo and the ham for 1 hour and ½, or until finally they are tender.
- About halfway through cooking, peel the potatoes and cut them, not with a clean cut of a knife but breaking them with it. Add them to the broth and continue cooking all the ingredients.
- Then add the olive oil to a small frying pan, heat it and add the rub to melt it. Once this is well undone, remove the pan from the heat and add the paprika. Stir the contents of the pan a little, and add it to the pot with the broth.
- Wash the spinach well, and chop it very small. Cook them with the other ingredients, and when they are done, test for salt and rectify if necessary.
- Once the indicated cooking time is over, let your Galician broth with spinach rest a little.
