Galician broth is a traditional soup from this region of Spain whose recipe has been passed down between generations.   • 250 gr. white beans
  • 1 bunch of turnip greens or turnip greens
  • 250 gr. beef
  • 1 piece of pork shoulder
  • 4 potatoes
  • 1 piece of oil
  • 2 Galician chorizos

Preparation of Galician broth with turnip greens

  1. To start preparing the broth, put the beans to soak in water and a tablespoon of salt, having selected and washed them previously. Do this procedure from the night before.
  2. In a separate container, place the piece of ham to soak as well, since you need to desalt it. Change the water twice.
  3. The next day, put 4 liters of water in the pot and add the broad beans, the ham, the sausages, the veal and the rub. Cook over medium heat for 1 hour, skimming as many times as necessary.
  4. While everything is cooking, wash the turnip tops with hot water and rub them between them to remove any roughness. Place water in a pot and when it starts to boil, add the turnip tops. When it boils again, remove them from the water, rinse them with cold water, chop and reserve.
  5. Next, peel the potatoes, dice them and wash them. When the broth takes 40 minutes to cook, add them.
  6. Once the broth has been on the heat for 1 hour, remove the meat and chorizos to a plate, chop them into small pieces and reserve. Add the turnip greens and cook for 20 more minutes.
  7. After time, check that the beans have softened, rectify the salt and add the meat and sausages. Stir to combine everything and cook for 5 more minutes.
  8. When you go to serve your Galician broth with turnip greens, add a drizzle of olive oil to each dish and voila, you can already taste it! Take advantage!
