  • 500 gr. salted rib
  • 2 salted spine bones
  • 300 gr. white beans
  • 1 large white cabbage
  • 800 gr. from potatoes
  • 60 gr. pork fat
  • Salt

Preparation of the Galician stew with cabbage

  1. The preparation of this Galician stew with cabbage begins the day before when you will have to soak the white beans and meats in separate containers. The purpose of this step is to soften the ingredients.
  2. The next day, remove the beans from the container and let them drain in a colander; do the same with meats. While the ingredients are draining, peel the potatoes and cut them into medium squares. Wash the cabbage and cut it into eight pieces.
  3. To start cooking the Galician stew with cabbage, place the beans in a large pot and sink the beans together with the pork fat, salt and water to the top. Cook over high heat until the water boils.
  4. When the water begins to boil, lower the heat to a minimum and add the meats and bones, let everything cook slowly so that it takes on more flavor for about two and a half hours. As time passes, do not forget to stir the stew from time to time.
  5. If during the cooking time you notice that the pot is running out of water or the liquid has reduced by half, add a little more water, but without bringing the level to the top of the pot.
  6. When the two and a half hours have passed, remove the pot from the heat and let the preparation rest for twenty minutes. Then remove the pork fat that has not melted, reheat the broth over medium heat and add the cabbage and potatoes.
  7. Let the preparation cook for another thirty minutes or until you notice that the cabbage and potatoes are cooked. Then rectify the salt and remove from the heat. Your Galician stew with cabbage is ready! Serve it hot and enjoy.
