  • 1 turkey of 7 kg.
  • 1/2 tablespoon freshly ground black pepper
  • 1/2 cup of olive oil
  • 1 tablespoon of salt
  • 1 tablespoon fresh thyme
  • Zest of 2 lemons

For the frosting:

  • 2/3 maple syrup
  • 1 tablespoon dried basil
  • 4 tablespoons minced fresh parsley
  • 2 tablespoons dried sage
  • 1 tablespoon dried thyme
  • 1 tablespoon freshly ground black pepper
  • 2 tablespoons garlic powder
  • 1 tablespoon of salt
  • 1/2 cup unsalted butter
  • 1 cup of white wine

Herb Glazed Turkey Preparation

  1. To start, preheat your oven to 160 ° C. Then, after removing the entrails and neck from the turkey, wash the inside and outside with cold water. Dry it with absorbent kitchen paper and separate the skin very carefully so as not to break it.
  2. In a bowl, mix the olive oil, the pepper, the salt, the fresh thyme previously washed and chopped and the zest of the two lemons. Make sure that the white skin is on the outside since it is very bitter.
  3. Place the turkey on a baking sheet or a kettle and spread it with this homogeneous mixture both on the outside and on the skin. Wrap the whole turkey in kitchen twine and bake for two hours.
  4. While the turkey is cooking, you will prepare the glaze. Add the butter to a small saucepan and melt, then add all the herbs, garlic powder, maple syrup, salt, and wine. Mix and cook for ten minutes over low heat. Reservation.
  5. When the first two hours have passed, remove the turkey, coat it with the glaze, and return it to the oven for two more hours. Every half hour you have to take it out and glaze it with the glaze. If you see that your turkey is already browned on the outside, it is ready.
