Ingredients

  • 1 turkey of 6kg. thawed
  • 100 gr. of butter
  • 2 tablespoons fresh thyme
  • 1 teaspoon dried thyme
  • 1 tablespoon dried sage
  • 1/2 teaspoon black pepper
  • 1 liter of chicken broth
  • 1 teaspoon salt

For the frosting:

  • 500 ml. pear juice
  • 255 gr. from honey
  • 100 gr. unsalted butter
  • 180 ml. chicken broth
  • 180 ml. white wine
  • 1 teaspoon dried thyme

For the sauce:

  • 2 tablespoons cornstarch
  • 120 ml. of water
  • two onions

Preparing glazed turkey for Christmas

  1. Your first step will be to prepare the glaze, for this add all the ingredients of it in a pot, mix and bring to the fire. Before it boils, lower the heat and cook for 20 minutes, stirring occasionally. Reservation.
  2. Preheat the oven to 200 ° C. To clean the turkey, remove the entrails from its interior and wash it with cold water, then place it in a refractory mold and tie the legs with kitchen string.
  3. Melt the butter in the microwave and mix it with the thyme, pepper, salt, and sage. Cover it with this mixture with your hands both outside and inside the skin.
  4. Mix the chicken broth with half a cup of the glaze, pour it into the mold and bake at 200ºC.
  5. After the first 30 minutes, lower the temperature to 170 ° C and cook for 4 and a half hours. Every 20 minutes, bathe the turkey with the rest of the glaze and every hour change the mold position so that it cooks evenly.
  6. If you have a kitchen thermometer, insert it into the breast and if the temperature is 73 ° C, it is ready to be removed from the oven. Allow it to sit for at least 30 minutes before eating it.
  7. To prepare the sauce, pour the juices that the turkey released when cooking it into the blender glass and blend together with the previously peeled onions. Place in a pot and separate, dissolve the cornstarch with the water and add it. Cook over low heat while stirring until it thickens.
