This cream fritters They are ideal to fill with different types of cream: chocolate cream, Catalan cream, vanilla cream, the list is endless.
- 500 grams of flour.
- 50 gr. of butter.
- ¼ liter of water.
- 4 eggs.
- Olive oil.
- 3 egg yolks for the cream.
- ½ liter of milk.
- 1 branch of cinnamon.
- Bark of lemon.
- 150 gr. of sugar.
- 50 gr. of flour for the cream.
Cream fritters recipe:
- First of all, we will fill a saucepan with water to boil it with a tablespoon of salt. Once it starts to boil, we will add 50 gr. of butter so that it melts on its own.
- With the butter already melted we will add the 500 gr. of flour in one go. Using a spatula, and on a low heat, we knead the dough until we get a dry ball.
- Once the ball is achieved, we will take it off the walls and wait about two minutes. Now we will remove it from the fire and let it warm up.
- We will add the eggs without beating one by one, mixing them well with the dough with the help of the spatula. The dough has to be consistent and manageable. Now, in a frying pan we heat enough oil and once it is hot we use a tablespoon greased in oil to take balls from the dough that we will fry to get the fritters. Do not do many at once so that they do not stick to each other when inflated.
- Remove them once they are well browned and leave them on absorbent paper so that they release a large part of the oil.
- It is the turn of the cream, for this we will heat ½ of milk with 1 cinnamon stick (if not, ground cinnamon is enough), and the lemon rind. While it boils, in a separate bowl we will mix the egg yolks with 150 gr. of sugar and 50 gr. Of flour.
- If the milk starts to boil, it means that we can add the yolks without stopping to move everything to mix well. When it starts to boil, we remove it from the heat while continuing to beat so that no lumps form. Now we will transfer the mixture to a cold container.
- It only remains to fill the cream fritters and bathe them in icing sugar and walá! We already have a great dessert.
