Ingredients

  • 2 cups instant polenta
  • 3 cups of vegetable broth
  • 1 cup of milk
  • 1 cup of grated Parmesan cheese
  • 100 gr. of butter
  • 1 teaspoon of oregano powder
  • Salt
  • Pepper
  • Vegetable oil for frying

Preparation of fried polenta

  1. The first thing you should do is put the vegetable broth, milk, butter, salt, pepper and oregano in a pot over medium heat.
  2. Mix all the ingredients and, when it starts to boil, slowly add the polenta. Stir everything simultaneously with a wooden spoon.
  3. The mixture will thicken quickly but do not stop moving since, if you do, it may get lumps. When it starts to boil, remove it from the heat, add the Parmesan cheese and stir again.
  4. Grease a tray with vegetable oil or butter and spread the still hot preparation on it. Be careful not to burn yourself. As soon as it’s done, cover the tray with cling film.
  5. Now put the tray in the refrigerator so that it cools down faster and, when it is cold, unmold it and cut the polenta into long sticks-shaped strips.
  6. Now put a finger of vegetable oil in a pan and, as soon as it is hot, add the batons. There should be enough oil to cover the sticks completely. Fry them little by little until they are golden brown and very crisp.
  7. As you get them ready, put them on a plate with kitchen paper to remove the excess oil. Your fried polenta is ready! Enjoy it!
