- 300 gr. breast of chicken
- two eggs large
- 1 plate of breadcrumbs
- 1 tablespoon of salt
- 1 tablespoon of black pepper
- 1 tablespoon of sweet paprika
- 3 potatoes medium
- Extra virgin olive oil
Preparation of flourless fried chicken
- A few hours before cooking, season the chicken breasts with a tablespoon of each spice (you can add more if you wish). Mix with your hands and leave in the fridge so that the flavor of the spices are well integrated into the chicken meat.
- An hour before cooking, take the chicken out of the fridge to warm it up so that it cooks more evenly. This is important, otherwise the chicken will be very dry. If you prefer, you can cut the chicken into strips to better distribute the portions.
- Wash the potatoes well under running water to remove any traces of dirt from the skin and proceed to peel them. Then wash them again and cut them into sticks of a similar thickness, into slices or wedges, however you like to eat your chips. Reserve until frying time.
- Put two pans to heat with copious amounts of olive oil while you prepare the chicken. To do this, first beat the eggs and prepare a plate with breadcrumbs.
- Take a chicken breast or strip, dip it in the egg and then pass through the breadcrumbs, bathing it well on both sides. Drain and put in the pan. Sauté on both sides for a couple of minutes on each side. Take advantage and fry the potatoes in the other pan with very hot oil as well.
- The trick to making delicious flourless fried chicken tender on the inside and crispy on the outside is to keep the meat at room temperature and not over-fry, because then it will dry out.
- Do not make more than two breasts at a time so that the oil does not get cold, if you opt for strips, fry 6 or 7 strips at a time.
- As you fry the chicken, let it rest on a plate with absorbent paper to release the excess oil, in this way the end result will be much more crunchy and delicious. Remember to also watch the potatoes until they are golden brown, add salt to taste once you take them out.
