Ingredients

  • 1 cauliflower
  • 100 ml. soy milk
  • 100 gr. chickpea flour
  • 30 gr. sesame seeds
  • 1 tooth of Garlic
  • Sunflower oil
  • Apple vinager
  • Ground black pepper
  • Water
  • Salt

How to prepare the battered cauliflower in the oven

  1. This rich recipe for baked cauliflower is accompanied by a light vegan mayonnaise that we will make at home. But if you wish, you can also accompany it with the sauce that you like the most.
  2. We start by washing the cauliflower well under running water, discard the green leaves and cut the stem. Then we separate the bouquets and wash them again to make them clean.
  3. In a pot with plenty of water and a pinch of salt, cook the cauliflower over high heat for approximately 15 minutes. When we notice that it is tender, we turn off the fire and set aside.
  4. Strain the cauliflower and put it to dry in a drainer, so that it releases all the water.
  5. Next we put the chickpea flour with 150ml in a deep plate. of water and stir well until we get a smooth texture as if it were beaten egg. If not, rectify with more water or more flour.
  6. We add one more pinch of salt to the mixture and the sesame seeds. We take the opportunity to preheat the oven to a temperature of 180ºC
  7. Now that the cauliflowers should be well drained, we are going to coat them. We are passing each bouquet through the mixture that we have made of flour and water and we will put them in a suitable source for the oven with vegetable paper at the base.
  8. We put the cauliflower in the oven and let it bake for 15 minutes at 180ºC.
  9. Meanwhile, we are going to prepare our special mayonnaise for vegans. Put the sunflower oil, soy milk, a clove of garlic, a tablespoon of apple cider vinegar and a pinch of salt in the blender glass.
  10. We put the ingredients to beat, keeping the mixer still at the bottom of the glass for a few seconds. When they begin to bind, we will begin to move the mixer gently from top to bottom until we get a thick and homogeneous sauce.
  11. After 15 minutes we take the cauliflowers out of the oven, transfer them to a plate and accompany them with our wonderful sauce. And that’s all! We can now enjoy this exquisite battered cauliflower in the oven.
