Ingredients

  • 1 kg of veal
  • 3 tomatoes mature
  • two onions
  • 2 cloves of garlic
  • 500 gr of mushrooms seasonal or dehydrated
  • 1 cup of white wine
  • 50 gr of flour
  • 1 bay leaf
  • Olive oil
  • Salt and pepper

Preparation of fricandó in sauce

  1. Before preparing this exquisite fricandó in sauce, we recommend that when you buy the veal, ask that it be cut into fine fillets and clean the excess fat, thus you will save more time when making this recipe.
  2. Add the dehydrated mushrooms to a bowl of water to soak for 25 minutes or until they have completely softened. If you bought seasonal mushrooms, you don’t need to do this step.
  3. Peel the onion and garlic, wash with water and cut into small squares. Next, peel the tomatoes and mash them into a sauce. Reserve everything.
  4. Season the beef fillets on both sides and flour them. Add oil to a large skillet and when hot, seal the fillets on both sides. Don’t leave them too long so they don’t get hard. Then remove from the pan and reserve.
  5. In the same skillet where you sealed the fillets, add a little more olive oil and sauté the onion and garlic until the onion is translucent. Then add the crushed tomato and cook over medium heat for 15 minutes.
  6. Add the mushrooms and cook for 5 more minutes. Then add the beef fillets and a cup of white wine. After 5 minutes add 2 cups of water to increase the amount of sauce and cook for 1 hour over low heat.
  7. We recommend that you consume this fricandó in sauce the next day, as the flavors of the stew will be more concentrated and much more appreciated. Serve hot with a good helping of bread. Enjoy your meal!
