For the torrijas:

  • 1 loaf of bread
  • 3 eggs
  • ½ tablespoon sugar
  • ¼ tablespoon of salt
  • 1 bowl with sugar
  • 1 bowl with cinnamon
  • 1 branch of cinnamon
  • Sunflower oil
  • 1 bowl of skin lemon grated

For the wine syrup:

  • 750 ml. from Red wine
  • 400 ml. of water
  • 300 gr. of sugar
  • 1 branch of cinnamon
  • 1 skin of Orange
  • 200 gr. white sugar

Preparation of torrijas with wine

  1. As we indicated at the beginning, the ideal is that you buy the bread two days before and cover it with a cloth until we are going to put on the French toast with wine.
  2. The night before we will also prepare the wine syrup so that it has rested correctly. Put the 750 ml of red wine and water in a saucepan and put it over medium heat until it boils. Then add the sugar, the cinnamon stick and the orange peel.
  3. Keep the heat at medium-high for about 5 minutes and let it boil again for a couple or three minutes. Then turn off the heat and cover to make the infusion.
  4. We will let it rest overnight and the next day we strain it and reserve it.
  5. To prepare the torrijas, beat the eggs in a bowl with half a tablespoon of sugar and a pinch of salt. Cut the bread into slices about two fingers thick.
  6. Next we have to soak each slice of bread first in the syrup and then in the egg that we have beaten with the sugar and salt.
  7. Put a frying pan on the fire with a good jet of sunflower oil. When it is hot, we add a cinnamon stick in the oil and the grated skin of a lemon. We stir and lower the heat to half.
  8. Fry the slices three by three or at most four by four and when they are golden brown on both sides, put them on a plate with absorbent paper to expel the excess oil.
  9. Put the leftover wine syrup back into a saucepan and when it starts to boil add the 200 gr. of white sugar. Stir and keep the heat at medium power for a quarter of an hour until a thicker syrup forms. Then let it rest for 10 minutes.
  10. Pour the wine syrup over the torrijas and then sprinkle with a mixture of sugar and cinnamon to have them ready. It is much better to let them warm a little before eating them, so they will take on the flavor of the syrup and they will be delicious. Take advantage!
