  • 6 tablespoons powdered sweetener

Preparation of lemon pie light

  1. We are going to start making the dough, and for this you are going to beat the egg yolk together with the ricotta.
  2. Having achieved a unique mixture, you add the sweetener to it. Beat again and add the grated lemon peel. Beat and now if you add the powdered milk and the baking powder together.
  3. It beats very well. Pour this base into the mold and put in the oven for about 20 minutes, remembering to spread it with a little light butter or use parchment paper to set.
  4. You can also prepare a base with whole grain cookies, you just have to crush them to make them a powder and mix with a little light butter until you make a paste, which you put in a mold and let it harden in the fridge.
  5. You can buy the flan already prepared or make it yourself. When you have it ready, put it in the container with the milk and stir well. Add the grated lemon peel and heat everything in a saucepan. When a single mixture has been made, let it cool.
  6. Beat the whites with a little salt until they are stiff. You add the sweetener and the lemon peel and continue beating until it forms well.
  7. Pour the lemon pie filling on the base and then put the meringue on top, thus getting your lemon pie light that is best left to rest in the fridge.
