Ingredients

  • 80 gr. of sugar.
  • 220 gr. from chocolate black.
  • 190 gr. clear of egg.
  • 60 gr. of yolks egg.
  • 30 gr. of butter.

  • Cocoa powder.
  • 3 tablespoons of nutmeg.

Preparation of the cake without flour

  1. We start by putting the egg whites in a bowl, without the yolks. The yolks will be reserved in another separate bowl. When this is done, we add the yolks one by one while we continue beating gently, so that it is integrated. Finally, a few tablespoons of nutmeg.
  2. Now we have to melt the chocolate, for this we put it in a bowl that can be closed and serves for the microwave, along with a little butter. As soon as we see that it begins to melt, we take it out and stir well so that everything melts. The best thing to do is to put it in times of 15 seconds at maximum power, to check how the chocolate is turning out. Add the melted chocolate to the bowl of eggs and stir to mix everything well.
  3. We turn on the oven at 180º C to have it ready in a few minutes.
  4. We grease the mold that we are going to use with a little butter, or olive oil, and the mixture that we have made is poured inside. When the oven is ready, we put the mold for half an hour.
  5. We will prepare the filling while the cake is made. To do this, we pour the cream into a bowl and stir it with a lot of sugar, until it reaches the point of whipped cream. To give it more flavor we add nutmeg.
  6. When the cake is ready, check by pricking it before removing that it is well done inside, let it rest for a few minutes. Then we cut it in half, right in the center horizontally.
  7. The lower part will be covered with as much cream as we like, we join with the other half so that they are well glued and the cream filling set between both parts.
