  • 500 gr. hake or tilapia fillets
  • 300 gr. Noodle
  • one tomato
  • two onions
  • 3 teeth of Garlic
  • 2 cloves
  • 1 strand of saffron
  • 1 handful of almonds
  • 2 bay leaves
  • Olive oil
  • Salt
  • Ground black pepper

Preparation of fish broth with noodle

  1. Start by cutting the fish fillets into medium pieces. Then cut an onion in two parts and in one of the halves stick the cloves. Add the fish, onion with cloves, and bay leaf to a large pot.
  2. Cover the pot with water until the ingredients are covered, add salt to taste and cook the fish for thirty minutes. Meanwhile, cut the rest of the onion and two garlic into small squares. Grate the ripe tomato.
  3. Add a little olive oil to a pot and when it is hot add the garlic and onion and fry until golden brown. Then add the grated tomato and sauté until the juice evaporates.
  4. When the fish is ready, add the broth where it was cooked to the pot with the sauce and heat over high heat until it boils. Add the noodles and while they soften, crush the almonds, the remaining garlic clove and the saffron in a mortar.
  5. When the noodles are almost done, add two tablespoons of the broth to the mortar, mix and pour into the pan again along with the fish. Cook a few more minutes so that the noodles are done and then rectify the salt and add a pinch of pepper. The fish broth with noodles is ready!
