  • 1kg. of heads and spines of hake or corvina
  • 1 onion
  • 1 carrot
  • 1 branch of celery
  • 2 teeth of Garlic
  • 1 green pepper
  • 1 bay leaf
  • 1 bunch of fresh mixed herbs
  • 1 tablespoon of olive oil
  • 8 glasses of water
  • 8 black peppercorns
  • Salt to taste

Preparation of fish consommé

  6. After it comes to a boil, cover and cook over low heat for 30 minutes. After time, rectify the salt, mix, remove from heat and let it rest to temper.
  7. Once cool, place a fine cloth over a strainer and strain it. (A filter to strain the coffee also works very well)
