Homemade Bread Soup Recipe

Ingredients for four people:

  • 3 slices of village bread from 2 days before
  • 2 large onions
  • 6 cloves of garlic
  • 2 eggs
  • 1 glass and ½ of broth or water
  • 50 ml. extra virgin olive oil
  • Salt

Preparation of homemade bread soup

  1. Put the oven to preheat to 200ºC with heat up and down and, while you wait, peel and cut the onions into slices or rings. Pour a little oil into a frying pan and place it on the fire. Once it is hot, add the onions that you have ready and the unpeeled garlic.
  2. Sauté the onion and garlic over low heat until it is all a little golden. Lightly toast the bread slices in the toaster or in a separate skillet and add to the first pan. Give them a few turns to take a taste of the oil.
  3. Add the broth or water and, once it comes to a boil, wait eight to ten minutes. It is that the liquid evaporates almost completely and that only the garlic, bread and onion remain with a fairly juicy point. If necessary, wait a little longer to get to this point.
  4. Transfer the contents of the pan to a suitable source for the oven. Remove the garlic cloves and crack the two eggs into a small hole that you must make at the bottom of the source. Put this in the oven and bake the soup for a few minutes in grill mode, until the bread is toasted more and the egg is done without the yolk being hard.
