  • 720 gr. of fish
  • 1 tablespoon of turmeric
  • 20 gr. coriander powder
  • 1 leek
  • two carrots
  • 30 gr. from celery
  • 1/2 liter of fish broth
  • 1 tablespoon of olive oil
  • Salt
  • Pepper

Preparation of fish fondue

  1. Take the fish you have chosen and clean it well. If you don’t know how to do it, when you pick it up at the fishmonger you ask the fishmonger to clean it up for you. Cut it into small pieces, squares or strips.
  2. Put the pieces of fish in a salad bowl or deep bowl, with half the coriander and turmeric, plus the olive oil. Mix well with a teaspoon and let it rest for half an hour at room temperature to macerate well.
  3. Peel the carrot, wash it well under running water and cut it into slices, then pass it through the grinder and chop it well.
  4. Also clean the leek well and cut it, to also pass it through the shredder and make it into very small pieces.
  5. Bring the fish stock to a boil with the leftover turmeric and seasoning to your liking.
  6. When it boils, add the carrot and leek pieces and cook for about 20 minutes, with the heat at half so that they soften.
  7. When the 20 minutes have passed, add the cilantro and stir to integrate well.
  8. Pour the broth into the bowls that you are going to serve and distribute the pieces that you have prepared.
  9. The best way to serve is to put a large bowl with the fish fondue and a gas burner at the bottom on a metal turret, since this must be eaten very hot to enjoy it well.
