Falafel is the name for Middle Eastern croquettes, which are made with chickpeas. You will learn both how to prepare them and how to make the yogurt sauce for this delicious falafel kebab.


For the falafel:

For the sauce yoghurt:

  • 1 yoghurt Greek
  • 1 tooth of Garlic
  • 3 pickles
  • 1 tablespoon capers
  • Provencal herbs

To assemble the kebab:

  • Kebab bread
  • Lettuce
  • Tomato

Falafel kebab preparation

  1. To make the falafel, the day before preparing this recipe you will have to put some hard chickpeas in a bowl with enough water, so that the next day they are tender.
  2. The next day, strain them and drain them well with the colander and pass them through the blender, to crush them well.
  3. Peel the carrot and cut it into small cubes, for which a shredder will come in handy. Also peel and chop the garlic cloves and onion well, for which we also advise you to go through the crusher. Add with the chickpeas and mix everything together again.
  4. Now add the rest of the spices and the spoonful of yeast and beat again. You will have a consistent dough, which you let rest for an hour or so.
  5. After that time, take portions of the dough and give it the shape you prefer. They are generally shaped like the classic croquettes, but there are those who give them the shape of a hamburger.
  6. Fill a plate with flour and bathe them in it, and then pass them through a frying pan, with very hot oil, so that they fry well.
  7. As you finish making them, put them on a plate with absorbent paper so that they release their oil.
  8. Now it’s time to make the yogurt sauce, for which you are going to chop the pickles, capers and garlic clove into small pieces. All this you beat in the blender glass, very clean, with the Greek yogurt and Provençal herbs to your liking, leaving you a smooth sauce.
  9. Heat the pita bread, or a few strips of corn if you haven’t been able to find it, although on this page we explain how to make the pita bread and you are going to start to assemble it.
  10. Clean the lettuce well and shred it, placing some leaves at the base. Then the tomatoes are cut into slices, being able to use the cherry tomatoes if you prefer, and you are placing the falafel croquettes. Cover with the yogurt sauce and roll or close the bread, and you are ready to eat.
