Chimichurri sauce

Chimichurri is a greenish sauce widely used in Latin America to accompany roasted meats, fish or to accompany salads. Above all it is traditional in Argentina and Uruguay.

  • 1 head of garlic
  • 1 tablespoon of paprika
  • ½ tablespoon of pepper
  • 4 sprigs of parsley
  • 1 glass of olive oil
  • ½ glass of vinegar
  • 2 bay leaves
  • 1 tablespoon of ground chili
  • ½ tablespoon oregano

Garlic chimichurri preparation

Garlic chimichurri is the most typical recipe for this sauce, and its preparation is quite simple.

  1. The first thing to do will be to wash the parsley sprigs under running water, taking advantage to cut the toughest parts and thus take advantage of the most tender areas. Although you can also use powdered parsley.
  2. Peel all the garlic cloves equivalent to a head of garlic and chop them into very fine pieces. To make the work easier, you can chop them in the shredder. On the other hand, you are going to crush the tender parts of the parsley that you have removed and mix both ingredients in a mortar.
  3. Now you are going to use the mortar to crush and combine both ingredients until you achieve a homogeneous mixture.
  4. Now add the ground chili, ½ tablespoon of oregano, 1 tablespoon of sweet paprika and ½ tablespoon of sweet paprika. Stir well to mix and now add the crushed bay leaves as well. Stir again.
  5. Finally, add the glass of olive oil, make it small, and half a glass of vinegar. Stir without stopping so that both liquids integrate well with the rest of the ingredients.

If you are not going to use it to eat anymore, then store it in an airtight container in the fridge.
