Ingredients for four people:
- 2 chicken breasts chicken
- 1 tooth of Garlic
- two onions
- 1/2 chilli
- two tomatoes
- 80 gr. chopped cilantro
- 1 lemon
- 1 cup sour cream
- 200 gr. grated white cheese
- 1 tablespoon of olive oil
- Black pepper
- 2 corn cakes per person
- 1/4 of lettuce
- 200 gr. from refried beans with chorizo
- 100 gr. from guacamole without onion
Preparation of Mexican chicken tostadas
- The first thing you should do is place the chicken breasts in a pot, cover them with water and add half an onion, the garlic, season to your liking and bring to the fire to cook for 20 minutes. The onion that you have not used, reserve it.
- If the chicken builds up foam on the surface while cooking, remove it. When it is well cooked, take it out and wait for it to cool. Then crumble and reserve.
- Next, wash the lettuce well and pass it through a centrifuge so that it is well drained. Cut it into julienne strips and reserve.
- Now we are going to prepare the pico de gallo. Peel, wash and dice the remaining onion. Wash the tomatoes, remove the seeds and also dice them. Wash and cut the cilantro very small.
- Add all these ingredients to a small bowl and season with olive oil, lemon and salt. Mix well. To give it a special touch, add half a chopped chilli. Reservation.
- To make the tostadas, take a corn pancake and spread a tablespoon of refried beans with chorizo, on top add a tablespoon of chicken, then a tablespoon of pico de gallo, then a little chopped lettuce, then a teaspoon of sour cream, a teaspoon guacamole and ends with a drizzle of grated cheese.
- Repeat the procedure with the rest of the pancakes and enjoy your Mexican chicken tostadas. Very good profit!
