- 100 gr. from bacon or bacon
- 250 ml. from cream or milk cream
- Half a cup of milk
- 1 tablespoon of flour
- 300 gr. grated Parmesan cheese
- Olive oil
- Nutmeg (optional)
Preparing the broccoli with cheese
- The first thing to do is wash the broccoli well, then separate the florets. Fill a pot with water, add salt to taste and bring to high heat, when it boils down to medium heat, add the broccoli and cook for 10 minutes. Drain and reserve.
- Take an oven-safe tray and brush it with a little butter or olive oil to prevent sticking, then place the broccoli on the tray, evenly distributed.
- Turn the oven to 200º C so that it preheats. Cut the bacon into strips or cubes and brown it in a very hot, spacious frying pan, it is not necessary to add oil as this ingredient already has enough fat.
- Once the bacon is golden brown, add the liquid cream to the pan along with the milk, a pinch of salt, pepper to taste and, if desired, nutmeg. Mix the tablespoon of flour with a little cold water to dilute it and then add it to the previous preparation as well.
- Let cook, stirring frequently, until the sauce has thickened slightly, test to ensure it is properly seasoned, and remove from heat.
- Pour the sauce over the broccoli, stirring carefully to make sure it is well distributed. Then top with a generous amount of Parmesan cheese on top and bake to gratin for 20 minutes or until perfectly golden.
