There is nothing easier than making a broccoli mousse to eat this delicious vegetable. A dukan diet dish that can be made for any other type of diet.


  • 200 gr. by surimi
  • 500 gr of broccoli
  • 500 gr. from tomatoes
  • 5 tablespoons of parsley
  • 1/2 bunch of tarragon
  • 4 sheets of jelly
  • 5 tablespoons of olive oil
  • 20 cl. from cream liquid
  • 2 teeth of Garlic
  • Salt
  • Pepper

Broccoli mousse preparation

  1. Wash the broccoli under running water and cut the stems into small pieces to cook them in a saucepan, with boiling water with two tablespoons of salt, for about 10 minutes. After that time, add the florets and let them cook for another 5 minutes.
  2. Strain the broccoli, passing it through cold water and draining well.
  3. In a container with very cold water, add the gelatin, while the cream is boiled, for about 10 minutes, at medium power in a saucepan, until it has been reduced by half.
  4. Pour the gelatin into the cream and stir well to mix.
  5. The broccoli you are going to grind in the blender, until you turn it into a puree.
  6. Pour the gelatin and cream combination into the puree and stir until you get a homogeneous mixture.
  7. Salt and pepper to your liking and stir again so that the spices are well integrated.
  8. Now take the mold, or molds, that you are going to use. Layer the broccoli puree, then top with the surimi. Another layer of broccoli and another layer of surimi sticks. When you have used up all the broccoli, store in the fridge for three hours.
  9. Now, for the tomatoes, you are going to cut them to your liking and mix them with the garlic (well mashed), the parsley, the tarragon and the oil, stirring very well to prepare this sauce that will make your mousse, when served, have a lot better taste.
