  • 500 gr. cassava flour
  • 500 gr. fresh cheese
  • 80 gr. unsalted butter
  • two eggs
  • 100 ml. milk
  • 20 gr. of sugar
  • 1 teaspoon of baking powder
  • Nutmeg

Bolivian cassava bread preparation

  1. The first thing you should do is preheat the oven to 180 ° C. Then, grate the cheese or, if it is fresh cheese, break it up with your hands and put it in a bowl.
  2. Next, add the previously sifted cassava flour, butter, baking powder, sugar, nutmeg and the two eggs to this bowl.
  3. Mix with your hands until you get a uniform dough and add the milk. Knead again.
  4. Sprinkle some cassava flour on the kitchen table and knead a few more minutes until the dough is smooth and without lumps.
  5. Grease a tray with oil and cover it with cassava flour, you can also place a waxed paper to prevent the breads from sticking.
  6. To assemble them, take a piece of dough and make balls of the size you want. Do not make them too big, remember that the bread will grow a little. Make a small hole in each ball with your index finger and place them on the tray on the side of the hole.
  7. Lower the oven temperature to 120 ° C. Insert the tray and bake for 20 minutes or until the balls are golden brown. After this time, take out the tray and you can eat your Bolivian cassava bread with the companion of your choice.
