Ingredients

  • 500 gr of diced beef
  • 2 teeth of Garlic
  • 1 carrot
  • 1 onion median
  • two tomatoes mature
  • Thyme
  • 1 beef stock cube
  • 4 potatoes medium
  • Flour
  • Salt
  • Virgin olive oil
  • Water

Preparation of beef stew

  1. Flour the pieces of veal and brown them in a frying pan with a good drizzle of olive oil. When they are ready, reserve them.
  2. In the same oil, sauté the onion cut in julienne, the two sliced ​​garlic cloves and the carrot in small cubes. The vegetables should be poached over medium heat and stirring from time to time so that they do not burn.
  3. Then add the meat stock cube and a sprig or a teaspoon of thyme.
  4. Crush the tomatoes and add them to the pan. When the tomato is done, transfer everything to a pot.
  5. If you have a pressure cooker, much better because we will get the meat to soften sooner, but if you don’t have it, nothing happens; actually the best stews are cooked over low heat.
  6. Also add the veal that we had reserved, cover with water and add a handful of salt.
  7. Let it cook for about 20 minutes with a pressure cooker and one hour with a normal pot over medium high heat.
  8. After this time, you can pass the sauce through a Chinese or beat it before adding the potatoes. To do this, remove the meat beforehand and grind it all with a mixer or with a Chinese. This way the sauce will be more homogeneous and consistent. Rectify with salt.
  9. Then add the potatoes, which will have to be broken rather than cut. To do this, make an incision in the potato and then stretch hard until it breaks. In this way we will get a thicker sauce.
  10. After about twenty minutes you will have the beef stew ready. Take advantage!
