  • 1 kg. pork loin
  • 1 onion
  • 3 tablespoons Dijon mustard
  • 1 glass of vegetable broth
  • 1 cup of cream liquid
  • 1 teaspoon ground rosemary
  • 1 tablespoon of flour
  • Olive oil
  • Salt
  • Ground black pepper

Preparation of loin in the oven with mustard

  1. The first thing to do is preheat the oven to 180 ° C. While the oven reaches the ideal temperature, clean the piece of tenderloin to remove any excess fat that it may have and then season with salt and pepper on all sides.
  2. Place the pork tenderloin in a baking dish, bathe it with a little olive oil and bake for 25 minutes. After time, turn the tenderloin and bake for 25 more minutes.
  3. Then activate the grill function in your oven and brown the tenderloin for five minutes on each side. Then take it out of the oven and let it rest to cool. When the meat is at room temperature, slice it into 1 cm slices. thick.
  4. While the tenderloin is in the oven, peel and dice the onion very small. Add a splash of olive oil to a pan and when it has heated, fry the onion over medium heat until it is transparent.
  5. Add to the pan a little of the juice from the tenderloin cooking, the vegetable broth, rosemary and salt and pepper to taste. Mix to integrate and continue cooking over medium heat for three more minutes.
  6. Then add the mustard and cream and mix vigorously without letting the cream boil. Let it cook for three more minutes, rectify the salt and remove the pan from the heat.
  7. When the sauce has cooled a bit, process it in the blender. Then add the sauce to a saucepan and when it has heated add the tablespoon of flour to thicken it. Mix quickly to avoid clumps, then add the sliced ​​pork tenderloin.
  8. Cook the tenderloin in the oven with mustard for three minutes over high heat and then serve immediately. Take advantage!
