  • 400 gr. from spinach
  • 60 gr. of butter
  • 60 gr. wheat flour
  • 200 ml. milk
  • 1/2 onion
  • Salt
  • Nutmeg
  • Ground black pepper
  • Grated cheese

Preparation of bechamel with spinach

  1. Put the butter in a pan and meanwhile peel and chop the onion as small as you can. As soon as the butter has melted, add the onion to the pan and wait for it to poach.
  2. Take advantage of this time to wash and drain the spinach and, when the onion has browned, add it to the pan. Leave them on the fire for about ten minutes and then add the flour. Stir everything and make sure the flour is toasted well otherwise your spinach bechamel will have lumps.
  3. Now integrate the milk, salt, nutmeg and black pepper and stir. Then wait for the bechamel to condense.
  4. You will see how little by little it is gaining consistency and if it is cooked for fifteen minutes it will be enough.
  5. After this time, your bechamel with spinach will be ready. Put the cheese on top, wait for it to cool down a bit and, surprise! You can serve it now!
