- 700 ml. from milk
- 150 gr. from almonds peeled
- 30 gr. brown rice flour
- Chopped parsley (optional)
- Black pepper to taste
- A pinch of nutmeg
- Salt to taste
Preparation of bechamel with almonds
- To prepare this delicious béchamel, the first thing you will do is make your own almond flour.
- Place them in a dry skillet and bring it to the fire. Next, stir the almonds for seven minutes until they are completely browned.
- Once cool, place them in a food processor or blender, blend until flour forms, then sift through a strainer.
- Pour a cup of cold milk into a bowl, add the flours and mix with some manual rods until integrated.
- If you are going to incorporate the parsley into the recipe, wash it, separate the leaves from the stems, cut it as small as you can and reserve.
- Next, pour the rest of the milk into a pot and put it on the fire. Once it is hot, add the flours and mix with the manual stirrer to dissolve.
- When the sauce comes to a boil, add the nutmeg, black pepper, and salt and keep stirring until it thickens. Add the parsley before removing from the heat.
- This almond béchamel is ideal for lasagna and to gratin vegetables. Use it while it is hot, since when it cools its consistency changes. Enjoy it!
- If you don’t drink milk, you can substitute it for some vegetable milk. And if you want to save time, you can also buy the almond flour that is already ready to use.
