Ingredients

  • two avocados mature
  • 1 onion
  • 4 teeth of Garlic
  • 2 chives
  • 1 leek
  • 3 tomatoes green
  • 3 sweet peppers or jalapeños
  • 1 bunch of coriander
  • 1/2 cup basil leaves
  • 1 tablespoon of oregano
  • Ground pepper
  • 1/2 of cup of olive oil
  • Salt to taste

Preparing the avocado sauce for pasta

  1. This sauce is so easy to make that you won’t be able to believe it. To start, peel, wash and cut the onion into medium squares. Do the same with the garlic cloves.
  2. Then cut the stem of the chives and the leek finely, preferably into tiny squares. Wash the tomatoes, extract the seeds and cut them into small squares.
  3. Then wash the sweet peppers, remove the surface where the branch is located and cut them in half. Extract the seeds from two chili peppers and keep those from the third.
  4. Cut the avocados in half, remove the pit and skin, and cut the pulp into medium squares. Then place the avocado cubes in the blender glass and process with the olive oil until you get a creamy paste. You can also use a hand mixer if you don’t have a blender.
  5. Add the onion, tomato, sweet peppers and garlic to the blender glass. Process until the ingredients are crushed and any lumps removed.
  6. To finish, add the chives, the leek, the basil, the coriander, the tablespoon of oregano and salt and pepper to taste. Process until obtaining a homogeneous sauce and rectify the salt.
  7. Your avocado pasta sauce is ready! Ideally, serve it at room temperature and, if you have a little left over, store it in a glass container and refrigerate. Enjoy your meal!
