Have you tried the Avocado Gazpacho? What sin! This dish is a delicious, refreshing and very light version of the traditional gazpacho, ideal for those days when you want to eat healthy and have a super rich meal in record time. If you feel like it, follow our instructions and let’s cook it together.

If this gazpacho is not enough for your stomach and you want to complement your menu with a more substantial second dish, we suggest a traditional grilled chicken with quinoa and broccoli salad. A complete meal, easy to prepare and very healthy!

Ingredients

  • 3 avocados
  • 1/2 onion
  • 1 tooth of Garlic
  • 1/2 cucumber
  • 1/2 stalk of chives
  • 1/2 green pepper
  • 4 tablespoons of sherry vinegar
  • 8 tablespoons olive oil
  • 2 slices of bread from the day before
  • 1 glass of water
  • Salt and pepper to taste

Avocado gazpacho preparation

  1. Prepare the avocado gazpacho ingredients: peel, wash and cut the onion into large pieces. Cut the cucumber (unpeeled) and the pepper in the same way.
  2. Cut the avocados into two parts, remove the skin and pit, and then cut the pulp into small squares. Cut the stalk of chives into two parts and remove the germ from the garlic clove. You have it all? Let’s shred!
  3. Add the avocado, the pepper, the cucumber, the onion, the garlic clove, half the glass of water and salt and pepper to taste to the blender glass. Process all the ingredients until you have a homogeneous mixture.
  4. Add the rest of the water, chives, oil, bread and vinegar to the preparation. Blend again until you have a thick, liquid mixture.
  5. Rectify the salt of the preparation and pour the contents of the blender glass into a glass jar. Refrigerate the avocado gazpacho for at least 2 hours or until serving time. Take advantage!
