  • 4 avocados mature
  • two onions purple
  • 1 chives
  • 12 tomatoes cherry
  • 1 hot pepper or chilli
  • 4 tablespoons fresh coriander, chopped
  • 10 lemons
  • 30 ml. Of olive oil
  • Salt and pepper to taste

Avocado ceviche preparation

  1. The key to this recipe are avocados, when you buy them check that they are ripe by touching them with your hands. If they are hard they are green, if they are soft they are ready to take home.
  2. Cut the avocados in half, remove the seeds and with a knife remove the skin from top to bottom. If they are ripe, it will come out easily. Cut into squares and reserve on a plate.
  3. Wash the chives well and cut it into small pieces, do the same with the chili or chilli and with the chopped coriander. Wash the cherry tomatoes and cut them into four parts.
  4. Peel the onions and julienne them. If you don’t like the taste of raw onion, soak it in a bowl with water for 10 minutes after mincing it. Dump the water and drain before using.
  5. In a bowl add all the ingredients, the olive oil, the salt, the pepper and the lemon juice. Stir well with a wooden spoon, cover and refrigerate for 10 minutes.
  6. If you want to vary the recipe, you can substitute the avocado for mango or tender coconut meat. It is also very rich preparing it this way.
  7. Take the bowl out of the refrigerator and if you have some large glasses at home, serve the avocado ceviche in them and decorate with some branches of coriander. We hope you enjoy it, nor will you notice that it does not contain fish. Enjoy your meal!
