Soup of bold (mushrooms)
Ingredients for 4 people:
- 7kg of bold
- 2 ripe tomatoes
- 7 medium onion
- 3 garlic cloves
- A slice of toast
- 50 g of toasted almonds
- Peppers
- Oil
- Salt
Preparation of bold soup
The mushrooms are washed and if any of them are large, they are split in half, the rest are left whole.
Put the mushrooms without water in a saucepan, and cook with minimal heat until they have released their liquid. Before it begins to reduce, they are removed from the heat, drained and the broth is saved.
In a saucepan with a little oil, fry the grated tomatoes and onion, as well as the bread, toasted almonds and garlic cloves, all crushed in a mortar.
