A great Asturian bean stew with red beans is what you need if you are tired of always having the same thing. You just have to get down to work and you will see the tempting lists in a jiffy.
Ingredients
- 400 gr. of red beans
- 1 onion
- 2 teeth of Garlic
- two potatoes
- 2 sausages
- 1 blood sausage
- 60 gr. bacon
- 60 gr. of lacón
- Olive oil
- Salt
- Pepper
- Colorant
Asturian fabadas preparation with red beans
- Peel the onion and hold it under tap water for a minute so that its powerful tear effect is reduced. Then you peel it and chop it into pieces as small as possible. You also peel and chop the garlic cloves. You can also add the whole garlic cloves that many people do, as long as you remember after removing them.
- Put a pot on the fire with a little olive oil and the beans with the onion and garlic, stir well.
- Add the beans and stir well so that they are poached with the rest of the ingredients and then cover everything with water until the pot is half covered.
- Also add the bacon and pork shoulder, turn up the heat until it boils and reduce it to half when it starts to boil.
- You will have to cook it all for an hour or so, sometimes it takes an hour and a half to be ready.
- When the half hour has passed, you salt and pepper it with a little coloring and stir with a teaspoon.
- Peel the potatoes, wash them under running water and cut them into wedges. You are going to cut the chorizo into slices and you can add the blood sausage whole if you want, but to distribute portions it is better if it is chopped.
- When half an hour has passed, add all these ingredients and cook everything together until the beans are ready.
