To prepare this Asturian bean stew dish, we are going to make them in a wood oven, and you will see how delicious they are going to come out, you will immediately notice that the texture and flavor is very different than if you made them over fire.
- 500 gr. white beans
- 2 liters of water
- 2 sausages
- 2 blood sausages
- 60 gr. bacon
- 1 onion
- 60 gr. dried pork shoulder
- 3 potatoes
- 1 bay leaf
Preparation of Asturian bean stew in a wood oven
- Although beans are now sold as quick-cooking, you can also use your old ones. You just have to leave them to soak overnight so that they are very tender the next day.
- Peel the onion and wash it well under running water so that your eyes don’t water so much and chop it into pieces as small as possible, which you put in a clay pot along with the water, the bay leaf and the amount of salt to taste.
- Light the wood fire and maintain the temperature, placing the clay pot on the fire. You add the beans and cook everything together for an hour and a half.
- While you can go chopping the chorizo, removing the skin if you consider it necessary. The blood sausage is much better if it is smoked, so you can prepare it, unless you prefer it fried, for which you can fry it with a little oil.
- In the case of potatoes, you are going to peel them, then cut them into wedges that you reserve together with the chorizo and blood sausage.
- Chop the bacon and the shoulder, and as soon as the hour and a half have passed add the potatoes, the blood sausage, the chorizo and these two ingredients. Stir well.
- Let the firewood consume while you finish making your plate and you will see how you clench your fingers.
