  • 1 small pot of asparagus whites
  • 2 teeth of Garlic
  • 50 gr. from Iberian Ham to tacos
  • one egg
  • 1/3 glass of olive oil
  • Sherry vinager
  • Pepper
  • Salt
  • 100 gr. stale bread

Preparation of the asparagus salmorejo

  1. First of all, you put a pot of water to boil and put the egg there. Leave it for fifteen minutes until it is cooked and, as soon as it cools, you will have to peel it and cut it into cubes. Reserve it in a bowl.
  2. On the other hand, put the bread in the blender glass along with the oil and vinegar and cut the ends of the asparagus. Then, laminate them and transfer them to the blender glass as well. Mix it all up.
  3. Now peel and laminate the garlic cloves and add them to the blender as well. Add a little salt and the ground black pepper and mix everything again. Your asparagus salmorejo is ready, transfer it to a bowl and put it in the fridge to cool.
  4. Before serving your salmorejo, you will only have to add a little egg and ham cubes to each portion. As soon as you try it, you will see how you want to do it all the time!
