Preparation of baked artichokes with potatoes

  2. While the oven is preheating, prepare the artichokes. For this you must clean them well, and cut them into half moons.
  3. Once you have cut the artichokes in this way, coat the baking tray with a very thin layer of extra virgin olive oil, and place the artichokes on it. Next, peel the onion and cut it into julienne strips, and distribute it on the tray well mixed with the artichokes.

  5. Wash the sprig of parsley, and chop it very small. Add it on top of the ingredients, along with some salt, ground black pepper, and oregano to your liking.

  7. Pour a drizzle of oil on top. Mix everything, stirring well, and if you wish you can add a little more grated cheese on top.
  8. Put the tray in the oven, and let it cook for about 30 minutes. After this time, check the potatoes and artichokes, which are probably already done.
