- 1 bunch of garlic
- 5 tablespoons of extra virgin olive oil
- White pepper
- Salt to taste

- To begin, you are going to wash the asparagus well, cut the hard part and then chop them into pieces of approximately one centimeter.
- To clean the garlic, wash them, then cut the roots, remove the first skin and chop them the same size as the asparagus.
- Pour three tablespoons of olive oil into a frying pan and, as soon as it is heated, add the garlic sprouts.
- Then sauté them for a couple of minutes over medium heat, add the asparagus and salt and pepper to taste.
- Once the vegetables have browned, remove them from the heat and wait for them to cool.
- Beat the eggs in a bowl with a pinch of salt, add the asparagus together with the garlic, mix to integrate and let it rest for five minutes.
- After time, add two tablespoons of oil to a large skillet so that the bottom is well greased, pour the mixture with the eggs and cook over low heat so it does not burn.
