Ingredients for four people:

  • 6 eggs
  • 300 gr. from asparagus green
  • 1 bunch of garlic
  • 5 tablespoons of extra virgin olive oil
  • White pepper
  • Salt to taste

Preparation of the omelette with garlic and asparagus

  1. To begin, you are going to wash the asparagus well, cut the hard part and then chop them into pieces of approximately one centimeter.
  2. To clean the garlic, wash them, then cut the roots, remove the first skin and chop them the same size as the asparagus.
  3. Pour three tablespoons of olive oil into a frying pan and, as soon as it is heated, add the garlic sprouts.
  4. Then sauté them for a couple of minutes over medium heat, add the asparagus and salt and pepper to taste.
  5. Once the vegetables have browned, remove them from the heat and wait for them to cool.
  6. Beat the eggs in a bowl with a pinch of salt, add the asparagus together with the garlic, mix to integrate and let it rest for five minutes.
  7. After time, add two tablespoons of oil to a large skillet so that the bottom is well greased, pour the mixture with the eggs and cook over low heat so it does not burn.
