  • 500 gr. from rice
  • 6 artichokes
  • 1.5 l. chicken broth
  • 1 onion
  • 70 gr. of butter
  • 200 ml. from White wine
  • 80 gr. grated cheese
  • Olive oil
  • Ground black pepper
  • Salt

Preparation of artichoke risotto

  1. The first thing you have to do is wash the artichokes very well and cut them into very thin slices. Next, peel the onion and cut it as small as you can.
  2. Next, pour the chicken broth into a saucepan and heat it over low heat. Meanwhile, put a little butter and a drizzle of olive oil in a skillet. When the butter is melted, add half of the artichokes and sauté them for about five minutes, until they are tender. Set them aside and reserve them.
  3. Put a little olive oil in another pan and fry the onion in it with a little salt. Once it starts to brown, add the rice and sauté it for about a couple of minutes. Then pour in the wine and turn the heat to high for five minutes to allow the alcohol to evaporate.
  4. Add the Parmesan cheese and a couple of ladles of broth and stir until the rice is absorbed. Add the artichokes that we did not make and continue adding broth little by little, until the rice is just right. It is important that you do not stop stirring the rice, since that is the trick of the risotto.
  5. Once we finish adding the broth and the rice is soft, turn off the heat and add a little more of the grated cheese, the ground black pepper and the artichokes that you have previously fried.
  6. Stir everything very well, add salt if necessary and serve this delicious artichoke risotto. Now we can only check how delicious we have been! Don’t let it get cold and sit down at the table as soon as possible to enjoy this exquisite dish. Take advantage!
