For the mass:

  • 130 gr. cold butter
  • 350 gr. pastry flour, high gluten-free (less than 10% protein)
  • 1 pinch of salt
  • 1 teaspoon of sugar
  • 70 gr. cold water
  • 1 teaspoon baking powder

For the filling:

  • 500 gr. from Apple pippin
  • 125 gr. brown sugar
  • 1 pinch of nutmeg
  • 1 teaspoon and ½ of cinnamon ground
  • Zest of ½ lemon

Thermomix apple pie preparation

  1. To prepare the dough you must incorporate the flour, butter (in small pieces), cold water, salt, sugar and yeast in the thermomix, in this order. Program 15 seconds at speed 6.
  2. Dump the dough on a flat surface, and form two very round balls. Divide the balls so that the dough is divided into two larger balls and two smaller ones, to make two cakes.
  3. The large balls will be for the bottom of the foot, and the small ones will cover the filling. Reserve all the dough.
  4. To form the circle of the base you must help yourself with a rolling pin. Put the dough on a parchment paper, so it can be easily handled later. Roll out until you get a thin dough that can cover the base of the mold.
  5. Take the baking paper with the dough, and place it on the mold. Squeeze the dough well over this mold. Carefully remove the paper from the oven. Roll the roller over the edge of the mold, removing the remains of broken dough.
  6. With them you will fill in the gaps that have been left by other parts of the mold. Reserve and repeat the entire operation with the other mold.
  7. Now you need to start with the filling. To do this, you must preheat the oven to 220ºC.
  8. Cut the peeled and seeded apples into thin slices. Mix them with the brown sugar, nutmeg, lemon zest and cinnamon. Arrange this mixture on the dough.
  9. Prepare the cake tops with the remaining batter. Moisten the edges of the dough, and press it down with a fork. With the remnants of dough you can make ornaments. Brush both tarts with the beaten egg, and make a few cuts at the top or a hole in the middle.
  10. Bake 20 minutes at 220ºC, then lower to 180º and bake for 30 more minutes. Your thermomix apple pie is ready, sublime!
